  • 2 fillets Salmon (Lachsfilet)
  • 300 g Spinach (Blattspinat, thawed and drained)
  • 1 Onion Onion (Zwiebel, sliced)
  • 2 cloves Garlic (Knoblauch, minced)
  • 200 g Sour Cream (Sauerrahm)
  • 150 g Mozzarella Shredded or sliced
  • 1 tbsp Olive Oil (Olivenöl)

Seasoning

  • to taste Salt (Salz und Pfeffer)
  • to taste Pepper (Salz und Pfeffer)

Instructions
 

Preparation

  • Preheat the oven to 200°C (400°F).
  • Heat 1 tbsp olive oil in a skillet over medium heat.
  • Sauté sliced onion until soft, about 5 minutes.
  • Add minced garlic and cook for 1 minute.
  • Add drained spinach and cook until dry.
  • Stir in 200 g sour cream, salt, and pepper to taste. Mix well.
  • Place two salmon fillets in a baking dish. Season with salt and pepper.
  • Spoon the spinach and sour cream mix over each fillet.
  • Top each fillet with 150 g mozzarella.
  • Bake for 12–18 minutes, until salmon flakes with a fork and cheese is melted and golden.
  • Let rest for 2 minutes before serving.

Notes

Pat salmon dry before seasoning for better topping adherence. Drain spinach well to avoid a watery topping. Use fresh mozzarella for a softer melt or low-moisture mozzarella for less liquid. Add a squeeze of lemon after baking to brighten flavors.
