Ingredients
  

For the Shrimp

  • 1 pound shrimp, fresh or thawed Pat dry before cooking
  • 1/4 cup honey For the sauce
  • 4 cloves garlic, minced For the sauce
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free
  • 1 teaspoon ginger, grated For the sauce
  • green onions, sliced, for serving Adds color and flavor

For Serving

  • 2 cups rice or quinoa, cooked Use pre-cooked for a quick meal
  • 3 cups mixed vegetables (bell peppers, broccoli, carrots) Cut small to warm through quickly

Instructions
 

Preparation

  • In a bowl, mix honey, minced garlic, soy sauce, and grated ginger to create the sauce.
  • In a skillet, heat oil over medium-high heat and add shrimp. Cook until pink and cooked through, about 3-4 minutes.

Cooking

  • Pour the honey garlic sauce over the shrimp and cook for an additional minute.
  • Serve the shrimp over cooked rice or quinoa, topped with mixed vegetables and sliced green onions.

Notes

Cool leftovers and store in an airtight container in the fridge for up to 3 days. Reheat gently. Do not freeze cooked shrimp as it can become rubbery. Consider using a wedge of lime for extra tang.
