Ingredients
  

For the Chicken

  • 2 pieces Chicken breasts Can use thighs for more juiciness
  • 2 tablespoons Olive oil For marinating chicken
  • 3 cloves Garlic Minced
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup Cucumber Grated
  • 2 tablespoons Dill
  • 2 tablespoons Mint
  • 1 teaspoon Salt
  • 1 teaspoon Lemon juice A little for the sauce

For Assembly

  • 2 cups Cooked quinoa or rice
  • 1 cup Tomatoes Chopped
  • 1 cup Red onion Chopped
  • 1 cup Bell peppers Chopped

Instructions
 

Marination

  • Marinate the chicken in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.

Cooking the Chicken

  • Grill or sauté the chicken until fully cooked, then slice it.

Preparing Tzatziki Sauce

  • Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, dill, mint, salt, and a little lemon juice.

Assembling the Bowls

  • Assemble the bowls by layering quinoa or rice at the bottom, adding sliced chicken, and topping with fresh chopped veggies.
  • Drizzle with tzatziki sauce before serving.

Notes

Serve warm or at room temperature. Keep bowls in airtight containers; store in the fridge for up to 3 days. Reheat chicken and grains in the microwave for 1-2 minutes, or eat cold. Marinate the chicken longer for more flavor and chop vegetables into similar sizes for even bites.
