Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Vegetables

  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved

For Garnish

  • Fresh herbs for garnish (optional)

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with garlic powder, thyme, oregano, salt, and pepper.

Cooking

  • Place chicken in the skillet and cook for 5-7 minutes on each side until cooked through.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add bell peppers, zucchini, and cherry tomatoes. Sauté until vegetables are tender, about 5-7 minutes.
  • Slice the cooked chicken and return it to the skillet, mixing with the vegetables.
  • Garnish with fresh herbs and serve hot.

Notes

For a different texture or extra crunch, check a cheesy chicken casserole idea. Cool leftovers to room temperature and store in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave until hot.
