Cooking Steps

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and minced garlic, and sauté until the onion is translucent.
  • Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned.
  • Stir in the diced bell peppers, chili powder, cumin, salt, and pepper.
  • Cook for another 5-7 minutes until the peppers are tender.
  • Serve over rice, in lettuce wraps, or as a taco filling.

Notes

For a saucier mix, add diced tomatoes. You can also stir in black beans or corn for extra fiber. For a Tex-Mex flavor, swap chili powder for taco seasoning. If desired, ground chicken or lean beef can be used instead of turkey.
