Ingredients
  

Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth Use low sodium for less salt.
  • 2 pieces lemons (juiced and zested) Fresh lemons for best flavor.
  • 2 tablespoons olive oil Extra virgin recommended.
  • 2 teaspoons dried thyme Fresh thyme can be substituted.
  • 2 teaspoons dried rosemary Fresh rosemary can be substituted.
  • Salt and pepper to taste

Rice

  • 2 cups jasmine or basmati rice Rinse before cooking for fluffy texture.
  • 4 cups water For cooking the rice.

Garnish

  • Chopped parsley For garnish.

Preparation

  • In a slow cooker, combine chicken broth, lemon juice and zest, olive oil, thyme, rosemary, salt, and pepper.
  • Add the chicken breasts and coat them well with the marinade.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  • About 30 minutes before serving, cook the rice according to package instructions.

Serving

  • Serve the chicken over fluffy rice and garnish with chopped parsley.
  • Enjoy!

Notes

Cool and store leftovers in airtight containers in the fridge for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 2 months.
