Ingredients
  

Main Ingredients

  • 2 pounds potatoes, peeled and diced Cut into even pieces for even cooking.
  • 1 pound kielbasa, sliced Can substitute with smoked sausage or andouille.
  • 1 cup shredded cheddar cheese Add more cheese for extra creaminess.
  • 1 cup sour cream Using full-fat sour cream recommended for creaminess.
  • 1 can cream of chicken soup Can swap with cream of mushroom or cream of celery.
  • 1 onion, chopped Can be omitted if not desired.
  • Salt and pepper to taste

Optional Toppings

  • green onions Chopped, for garnish.
  • additional cheese For topping if desired.

Instructions
 

Preparation

  • In a slow cooker, layer the diced potatoes, kielbasa, and chopped onion.
  • In a separate bowl, mix together the sour cream, cream of chicken soup, salt, and pepper.
  • Pour the mixture over the layered ingredients in the slow cooker.
  • Top with shredded cheddar cheese.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  • Stir gently before serving.

Notes

Cool leftovers to room temperature, then store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the microwave or on low heat in a covered pan until hot.
