  • 4 pieces chicken breasts Use boneless, skinless for even cooking.
  • 1 cup sundried tomatoes in oil, drained and chopped Drain well so sauce is not too oily.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter sauce.
  • 1 cup chicken broth
  • 1/2 cup parmesan cheese, grated Adds flavor and thickens the sauce.
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper Check seasoning at the end.
  • for garnish fresh basil

Preparation and Cooking

  • Place the chicken breasts in the slow cooker.
  • In a separate bowl, mix together the sundried tomatoes, heavy cream, chicken broth, parmesan cheese, garlic, Italian seasoning, salt, and pepper.
  • Pour the sauce mixture over the chicken in the slow cooker.
  • Cover and cook on low for 4-6 hours or until the chicken is tender.
  • Once done, serve the chicken with the sauce over pasta, rice, or mashed potatoes.
  • Garnish with fresh basil before serving.

Notes

Cool the dish to room temperature before storing. Use airtight containers and refrigerate for up to 3 days or freeze for up to 3 months.
