  • 2 cups cooked rice Use cooked rice, not dry rice.
  • 1 lb chicken breasts, diced Cut chicken into even pieces for even cooking.
  • 2 cups broccoli florets If using frozen broccoli, add it in the last 1-2 hours.
  • 1 cup cheddar cheese, shredded Add cheese at the end to keep it creamy.
  • 1 can cream of chicken soup You can use cream of mushroom soup as a substitute.
  • 1/2 cup chicken broth Use to keep the dish from drying out.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust seasoning to preference.

Preparation

  • Put the diced chicken, broccoli, cooked rice, cream of chicken soup, and chicken broth into the slow cooker.
  • Sprinkle garlic powder, onion powder, salt, and pepper over the mixture. Stir until it mixes well.
  • Cover the slow cooker and cook on low for 4–6 hours, until the chicken is done.
  • About 15 minutes before you serve, add the shredded cheddar cheese and stir until it melts and becomes creamy.
  • Serve while warm.

Notes

Serve in bowls or on warm plates. Top with extra cheese, chopped parsley, or a squeeze of lemon if desired. Good with a green salad or dinner rolls. Let leftovers cool and store in an airtight container in the fridge for up to 3–4 days.
