  • 2 lbs boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 1/2 cup brown sugar
  • 1 cup pineapple chunks optional
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • to taste Salt and pepper
  • for serving Cooked rice or noodles

Preparation

  • Place the chicken breasts in the crockpot.
  • In a bowl, mix together teriyaki sauce, brown sugar, garlic, ginger, salt, and pepper.
  • Pour the sauce over the chicken, making sure it’s well coated.
  • If using, add pineapple chunks.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken in the sauce and serve over rice or noodles.

Notes

Let the chicken cool completely before storing. Use chicken thighs for more flavor and moisture. To thicken the sauce, stir in cornstarch mixed with water and cook on high for an additional 10-15 minutes.
