This creamy potato soup is easy to make in a crockpot and is perfect for busy days. Just set it and come back to a warm, comforting meal.

Ingredients
  

Main Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • to taste Salt
  • to taste Pepper

  • shredded cheese for serving
  • green onions for serving
  • bacon bits for serving

Instructions
 

Preparation

  • Place the diced potatoes, onion, and garlic in the crockpot.
  • Pour in the vegetable or chicken broth.

Cooking

  • Cook on low for 7-8 hours or on high for 4-5 hours, until the potatoes are tender.
  • Once cooked, mash some of the potatoes with a potato masher to thicken the soup.
  • Stir in the heavy cream, and season with salt and pepper to taste.

Serving

  • Serve hot in bowls with optional toppings like shredded cheese, green onions, or bacon bits.

Notes

Cool the soup to room temperature before storing. Store in an airtight container in the fridge for 3 to 4 days. Can be frozen for up to 3 months.
