Ingredients
  

For the Chicken

  • 2 pieces Chicken breasts Use boneless, skinless for best results
  • 2 tbsp Olive oil For marinating chicken
  • 1 tbsp Chili powder Adjust for spice preference
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Salt To taste
  • 1/2 tsp Pepper To taste

For the Tacos

  • 8 pieces Corn tortillas Warm before serving
  • 1 cup Onion, diced White or red onion works
  • 1/2 cup Cilantro, chopped Add more for garnish
  • 1 piece Lime For squeezing juice over tacos

Instructions
 

Marinate the Chicken

  • Mix olive oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl.
  • Add chicken breasts and coat them well. Marinate for at least 30 minutes.

Grill the Chicken

  • Grill the marinated chicken over medium-high heat until cooked through and slightly charred.

Prepare the Tacos

  • Warm corn tortillas in a skillet or on the grill.
  • Slice the grilled chicken thin.
  • Fill each tortilla with sliced chicken. Top with diced onion and chopped cilantro.
  • Squeeze lime over each taco and serve immediately.

Notes

Store leftover grilled chicken in an airtight container in the fridge for up to 3 days. Do not assemble tacos before storing.
