Chicken with Buttered Noodles

  • 2 pieces chicken breasts Boneless and skinless
  • 8 oz egg noodles Or any short pasta
  • 4 tablespoons butter Use unsalted for better control of salt
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
  • for garnish Parsley Chopped

Preparation

  • Cook the egg noodles according to package instructions. Drain and set aside.
  • In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant.
  • Season chicken breasts with salt and pepper, and add them to the skillet. Cook until golden brown and fully cooked, about 6-7 minutes on each side.
  • Once the chicken is cooked, remove it from the skillet and let it rest.
  • In the same skillet, add the remaining butter and noodles. Toss until the noodles are well coated.
  • Slice the chicken and serve it over the buttered noodles. Garnish with parsley.

Notes

Cool the dish to room temperature before storing. Store in an airtight container in the fridge for up to 3 days. Reheat in a pan over low heat or microwave until hot.
