Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the cranberries, orange juice, orange zest, and brown sugar until well combined. (Tip: mash a few cranberries for more sauce.)
  • Season the chicken breasts with salt and pepper and place them in a baking dish.

Baking

  • Pour the cranberry-orange mixture over the chicken, ensuring the breasts are well coated.
  • Drizzle olive oil on top.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  • Garnish with fresh herbs if desired before serving.

Notes

Cool the chicken to room temperature before storing in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze in a sealed container for up to 2 months. Use cooked chicken within time limits for best quality.
