Delicious vegetarian enchilada recipe with a mix of beans, mushrooms and sweet corn. It comes together in less than 30 minutes and is so delicious!
Cook onion for a minute. Add in mushrooms, spices and cook until mushrooms are golden brown. Cover with a lid and set aside.
Ingredients: For the Filling red onion sweet corn cheddar black beans salt, pepper ground cumin ground cinnamon mushrooms vegetable oil
For Enchiladas: enchilada sauce your favorite tortillas
Mix black beans, sweet corn, onion, mushroom mix, salt and pepper, cheese and 2 tablespoons of Enchilada Sauce.
Pour in Enchilada Sauce and fill the dish with rolled tortillas.
Bake at 400 F for 20 minutes.
