Combine butter and sugar. Beat on low speed with an electric mixer or stand mixer until smooth and creamy.

Gradually add egg and vanilla. Mix on low until combined. Set aside.

Add the dry ingredients to wet. Stir in chocolate chips.

Freeze the cookie dough for 30 minutes or fridge for longer until the dough resembles ‘’playdough’’.

Form about 2 ½ tablespoon-sized cookie dough balls and bake for 11-12 minutes.
