  • 4 cups mixed greens or shredded lettuce
  • ¼ cup red onion, thinly sliced
  • ½ cup shredded cheddar or Monterey Jack cheese (optional)
  • Fresh cilantro or parsley, for garnish
  • ¼ cup Greek yogurt or sour cream
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • ½ tsp ground cumin

Directions

  1. Preheat your oven to 425°F (220°C). In a mixing bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast them for 20-25 minutes, flipping halfway through, until they are tender and golden.

  2. While the potatoes are roasting, prepare the sauce by whisking together all the sauce ingredients in a small bowl. Taste and adjust the seasoning as needed; then set aside.

  3. In a skillet over medium-high heat, add the remaining tablespoon of olive oil. Season the steak strips with salt and pepper.

  4. Sear the steak for 2-4 minutes on each side, based on your preferred level of doneness. Once they’re browned and cooked to your liking, remove the steak from the skillet and let it rest for about 5 minutes before slicing against the grain if necessary.
