  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp smoked paprika (optional)
  • Oil for frying

Instructions

  1. Pound the chicken to about 1/2 inch thick for even cooking.
  2. Set up a dredging station: place flour in one dish, beaten eggs in a second, and a mix of panko breadcrumbs and parmesan in a third.
  3. First, dust the chicken with flour, then dip into the beaten eggs, and finally press into the breadcrumb mixture, ensuring each piece is well coated.
  4. Heat oil in a skillet over medium heat, ensuring there’s enough to fry but not deep fry.
  5. Add the coated chicken to the skillet, leaving space between each piece to avoid overcrowding.
  6. Cook until golden brown on one side, then flip and cook the other side until done, about 6-8 minutes per side.
  7. If chicken is thick, transfer to a hot oven for a few minutes to finish cooking.
  8. Let the chicken rest on a wire rack before serving to keep the crust crispy.
