If you’re in the mood for a creamy, cheesy, and comforting side dish, look no further than this delicious recipe for Cheesy Scalloped Potatoes. Whether it’s a family dinner or a special occasion, this dish is sure to be a hit.

Ingredients:

  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1⁄2 cups milk
  • 1 teaspoon salt
  • A dash of cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1⁄2 cup grated cheese (for sprinkling on top)

Directions:

Step 1: Preparing the Cheese Sauce

  1. In a small saucepan, melt the butter over low heat. Once melted, blend in the flour, and let it sit for a minute.
  2. Gradually add the cold milk, stirring continuously with a whisk to avoid lumps.
  3. Season the sauce with salt and a dash of cayenne pepper. Continue to cook the sauce over low heat until it becomes smooth and begins to boil. Remember to stir occasionally with a whisk.
  4. Once the sauce is smooth and reaches a boiling point, reduce the heat and stir in the grated sharp cheddar cheese until it’s fully incorporated. This will result in a rich, creamy cheese sauce.

Step 2: Assembling the Dish

  1. Take a lightly greased one-quart casserole dish.
  2. Place half of the thinly sliced potatoes in the bottom of the casserole dish.
  3. Pour half of the prepared cheese sauce over the first layer of potatoes.
  4. Repeat the layering process with the remaining potatoes and the rest of the cheese sauce.
  5. Sprinkle the remaining 1/2 cup of grated cheese on top of the dish. For added visual appeal, you can sprinkle some paprika for color.

Step 3: Baking the Scalloped Potatoes

  1. Bake the assembled dish uncovered for about 1 hour at 350°F (175°C).
  2. The scalloped potatoes are ready when the top is golden brown, and the potatoes are tender when pierced with a fork.

Step 4: Serve and Enjoy

  1. Once the dish is done, remove it from the oven and allow it to cool slightly.
