Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sushi rice by combining it with water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 18 minutes. Once done, remove it from the heat and let it rest for 10 minutes.
  3. While the rice is resting, mix together the rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar dissolves. Fold this mixture into the cooked rice and let it cool slightly.
  4. In another bowl, combine the chopped crab (or shrimp), mayonnaise, Sriracha, sliced green onions, soy sauce, sesame oil, and sesame seeds. Taste and adjust the seasoning to your liking.
  5. Spread the seasoned sushi rice evenly in a 9×9-inch or similar sized baking dish.
  6. Top the rice layer with your seafood mixture, spreading it out evenly.
  7. Bake in the preheated oven for about 12-15 minutes, or until the topping is bubbly and the edges have turned a lovely golden color.
  8. After removing from the oven, sprinkle the dish with crumbled nori and any optional garnishes like furikake for extra flavor.
